It will soon be known whether Italian cuisine will become a UNESCO Intangible Cultural Heritage of Humanity. He knows something about food of excellence, the owner of Modus, Paolo De Simone, an ambassador of the Mediterranean diet in the World, a nomination received in 2024 by the “Ancel Keys” Living Museum, which is committed to transmitting a culinary philosophy that combines authentic taste with the promotion of well-being.
Italian cuisine in the world, Unesco heritage between pizza and the Mediterranean diet is the theme of an evening on Wednesday, December 10, at Modus di Paolo di Simone in Corso Magenta, open to the public with reservations, with the participation of producers and companies from the Cilento region of which the cuisine and pizza of the owner of Modus are an expression and a recognized and certified representation. The evening was proposed to celebrate Italian cuisine on its path to being proclaimed a Unesco intangible heritage site, while pizza has already achieved Unesco recognition in 2017 through the art of the pizza maker.


Paolo De Simone, a native of Vallo della Lucania, trained in the bakery industry, debuted in 2010 with Storie di pane, a gourmet workshop then continued with local. The pizzas are made with sourdough and local, whole-grain, stone-ground flours that are low in glycemic content, rich in fiber and minerals. Paolo De Simone’s various awards include “Best Pizzaiolo d’Italia” during the “Elementi” competition, a recognition that celebrates technical skill, creativity and the ability to enhance quality ingredients, fundamental to his cuisine, in 2022 the Pizzeria Novelty of the Year- Solania Award, in 2025 the Biodiversity of Italy award from the “Pizza&Cocktail” 2025 guide by Identità Golose.
