Back more authentic and surprising than ever is Städlin‘s signature Roman Brunch, the recently reopened Roman eatery between Testaccio and Trastevere, right under the recently reopened Ponte dell’Industria, which confirms itself as one of the city’s liveliest and most transversal gastronomic destinations. Born from the vision of the Coticoni family, Städlin is a former industrial mill transformed into a multipurpose space capable of mixing conviviality, urban aesthetics and culinary quality. The beating heart of the restaurant is the large outdoor courtyard paved in cobblestones-the famous Piazzetta Städlin-that can accommodate up to 250 people, perfect for brunch, aperitifs and evenings under the stars. All with the convenience of free private parking at 12 Baccio Baldini Street.
The Roman Brunch, available every Saturday and Sunday from 10 a.m. to 4 p.m., is an event that combines the laid-backness of international brunch with the true soul of Capitoline cuisine. “Each dish is born from creative play, but remains anchored in its Roman roots. It’s our way of making guests feel at home, with something new on the plate,” says chef Davide Vitiello, mind and heart of Städlin’s kitchen.
The buffet-rich, unlimited and affordable at 20 euros-is the beating heart of Städlin’s Roman Brunch, a sincere homage to home cooking reinterpreted with irony and taste. Here, each dish becomes a small gastronomic tale, in which Roman tradition is mixed with the relaxed spirit of international brunch, leaving aside Anglo-Saxon clichés and embracing the true flavors of the Capital.

Replacing the classic toast comes the “pizza e mortazza,” soft, fragrant, served with generous slices of artisanal mortadella-a simple, yet deeply Roman gesture. The omelet gives way to frittata with zucchini, thick, rustic, cut into squares as in the kitchens of yesteryear. Instead of bacon, crispy but anonymous, here is toasted guanciale, savory and intense, ready to enrich bruschetta and pasta dishes.
And then the real taste pampering begins: meatballs in sauce, tender and dipped in a basil-scented tomato, perfect for picking up with bread. The hand-cut porchetta, succulent and aromatic, is an ode to Lazio cuisine. There is no shortage of cacio e pepe supplì, with a stringy heart and crispy breadcrumbs, little caskets of Roman comfort food.
The bruschetta with crispy guanciale combines the simplicity of warm bread with the gluttony of a savory topping, while the battered squash blossoms arrive golden and fragrant, delicate but firm on the palate, like panzanella, but with octopus, a true bonanza. Among the first courses, the queens of Roman cuisine reign: carbonara and amatriciana, whipped just right, true brunch stars for those seeking the substance of Roman cuisine. There is also chicken with peppers, with the ever-present baked potatoes, a typical dish of family feasts, which tastes of home and memories, or the lighter version of chicken is accompanied by fennel and oranges, and for those who like fish roasted octopus with a side of mashed potatoes.
To close on a sweet note, a selection of wholesome and irresistible desserts: ricotta and sour cherry cake, soft and mouthwatering, and theever-present tiramisu in a jar, creamy, layered, to be enjoyed to the last spoonful, and cup of chocolate cream with amaretto crumbs.
Städlin’s buffet is a true journey through the flavors of Rome, but with lightness and contemporary spirit: a convivial and rich table designed for sharing, tasting, returning to the buffet again and again without ever getting tired. A brunch where tradition puts on the party dress. Special dates are also added with evening brunches for those who want to enjoy an evening of music and excellent food &drink.
Städlin’s aperitif: the most eclectic moment of the day
If brunch is the perfect start to a relaxing day, the aperitif is the highlight to fully enjoy the creative and mixology-oriented soul of Städlin. Each drink – alcoholic or non-alcoholic – is designed to be paired with gourmet offerings: assorted bruschettas, San Daniele DOP tagliere with slices of warm focaccia, or the mouthwatering scrocchiarella stuffed with mortadella di Bologna IGP, stracciatella and pistachio pesto.
The drink list: a sensory journey
Daniele Arciello ‘s signature drink list is a sensory journey through tropical scents, spicy suggestions and citrus alchemy. Each cocktail has a distinct identity and a story to tell.
Lust is an ode to exotic sweetness: a velvety blend of vanilla vodka, liqueur and passion fruit juice, balanced with house sour mix and a sparkling touch of Organics lemon bitters.
Gola seduces with smoothness: Disaronno and vanilla vodka blend with Städlin sour mix and Organics black orange in an intense, fragrant sip. For those seeking a more refined twist there is Erotico, a tropical and elegant mix of Flor de Caña 12-year-old rum, Malibu coconut liqueur, pineapple juice and a delicate citrus acidity, closed by the bitter touch of lemon bitter. Finally, Forbidden is designed for those who like bold flavors: the Vida del Maguey mezcal is ignited with a chili liqueur, softened in the house sour mix and refreshed with pink grapefruit soda. A cocktail that surprises on the first sip and conquers on the second.

For those who do not drink alcohol, Städlin has come up with equally creative and sophisticated offerings where taste is never a compromise. Quiete is a fresh and elegant botanical reinterpretation made with Tanqueray 0.0 non-alcoholic gin and Organics tonic water. Pensiero plays with the warm notes of Giffard non-alcoholic rum, enhanced with lime juice and Coca-Cola, for a smooth, familiar sip but with character. Astonishment is crisp and citrusy: Giffard non-alcoholic bitters, lime and pink grapefruit soda combine in a refreshing mix that leaves the palate amazed and fulfilled.
The beverage selection ranges from coffee and freshly squeezed juices to brunch cocktails such as Bloody Mary, Mimosa, Bellini, Spritz, Americano, and a selected wine and bubbly list.
Whether it‘s for a relaxed brunch or an urban aperitif, Städlin is the place where time expands, flavors tell Rome with irony and passion, and every detail is designed to provide an authentic, tasty and convivial experience.
